Recipe: Fresh Fruit Clafouti

A clafouti is a country-French dessert that's made by topping a layer of fresh fruit with a layer of cake-like batter and baking it. It makes a great addition to a brunch menu.

Makes 1 Cake (six servings)

  • 1 1/2 cups sliced ripe nectarines, plums, peaches, or pitted cherries
  • 2/3 cups fat-free evaporated milk
  • 1 large egg, beaten
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 Tablespoon powdered sugar
  1. Preheat oven to 375 degrees. Prepare an 8 inch glass baking dish with non-stick baking spray. Layer the fruit in the baking dish.
  2. Combine the milk, egg, flour, sugar, vanilla, nutmeg and salt in a bowl and mix with a hand mixer or beater until smooth. Pout over fruit.
  3. Bake 35 to 40 minutes, or until puffed and golden brown. Serve warm, or at room temperature. At serving time, sprinkle with powdered sugar and cut into slices.
