Recipe: Fresh Fruit Clafouti
A clafouti is a country-French dessert that's made by topping a layer of fresh fruit with a layer of cake-like batter and baking it. It makes a great addition to a brunch menu.
Makes 1 Cake (six servings)
- 1 1/2 cups sliced ripe nectarines, plums, peaches, or pitted cherries
- 2/3 cups fat-free evaporated milk
- 1 large egg, beaten
- 2 Tablespoons all-purpose flour
- 2 Tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon nutmeg
- 1/8 teaspoon salt
- 1 Tablespoon powdered sugar
- Preheat oven to 375 degrees. Prepare an 8 inch glass baking dish with non-stick baking spray. Layer the fruit in the baking dish.
- Combine the milk, egg, flour, sugar, vanilla, nutmeg and salt in a bowl and mix with a hand mixer or beater until smooth. Pout over fruit.
- Bake 35 to 40 minutes, or until puffed and golden brown. Serve warm, or at room temperature. At serving time, sprinkle with powdered sugar and cut into slices.
