INGREDIENTS:

1 pound caribou or other game meat

1/2 cup oatmeal

1/4 cup skim or low fat milk

1/2 teaspoon salt

1/2 teaspoon Worcestershire sauce

1/4 teaspoon pepper

1 small onion, finely chopped (1/4 cup)

1 egg

2 teaspoons Italian seasoning

1/4 teaspoon red pepper flakes (increase for more spice)

2 cloves garlic, minced

1/2 cup Parmesan cheese

PREPARATION:

Heat oven to 400◦F.

Spray a 13 x 9 inch pan with cooking spray.

In a large bowl, mix all ingredients.

Shape mixture into 24 (1 1/2 inch) meatballs.

Place 1 inch apart on baking pan.

Bake uncovered about 6 minutes. Turn meatballs. Bake for an additional 6 minutes or until temperature reaches 160◦F.

Omit milk and cheese for a dairy free option.
