INGREDIENTS:

  • • 1 ¼ cups water
  • • ½ cup uncooked brown rice
  • • ¼ teaspoon salt
  • • 3 cups fat free milk
  • • 3 tablespoons brown sugar
  • • 1 teaspoon vanilla extract
  • • Berries or other fruit (optional)

PREPARATION

  1. In a large saucepan, combine water, rice, and salt.
  2. Bring to a boil.
  3. Reduce heat, cover, and simmer for 30-45 minutes or until tender.
  4. Stir in milk and brown sugar.
  5. Cook, uncovered, for 40-50 minutes, stirring occasionally.
  6. Remove from heat and stir in vanilla.
  7. Chill if desired.
  8. Serve with fruit on top.
