Ingredients:
2 tablespoons olive oil
1 large onion, diced
1 teaspoon salt
4 cloves garlic, minced
3 medium carrots, diced
3 stalks celery, diced
2 medium potatoes, diced
2 teaspoons Italian seasoning
4 cups vegetable broth + 1 cup water
1 pound meat of choice, browned
2 15 ounce cans diced tomatoes
1 cup frozen corn
1 15 ounce can kidney beans
1 bay leaf
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped – optional
1 tablespoon lemon juice, or to taste – optional
Preparation:
Once hot, add onion and 1 teaspoon salt and cook for 5 minutes, stirring often.
Add garlic, carrots, celery, and potatoes and cook for 5 more minutes, stirring often.
Add Italian seasoning and cook for 1 more minute.
Add broth, water, meat, tomatoes, corn, beans, bay leaf, and black pepper.
Bring to a boil and then reduce the heat to low and simmer, covered, until the vegetables are tender, about 35 minutes.
Remove from heat and stir in parsley and lemon juice.
