INGREDIENTS:
- 1 1/3 cups whole wheat flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- ½ teaspoon cinnamon
- 1 1/3 cup fat free milk
- 1 egg, lightly beaten
- 1 tablespoon canola oil
- 1 cup whole blueberries, fresh or frozen
- Cooking spray
PREPARATION:
- In a large mixing bowl, mix flour, baking powder, sugar, and cinnamon.
- In another mixing bowl, beat milk, egg, and oil.
- Add the wet ingredients to the dry ingredients. Stir until combined.
- Add blueberries and stir gently.
- Coat a skillet with cooking spray.
- Heat skillet over medium-high heat.
- Pour ¼ cup batter onto the hot skillet and cook until browned.
- Flip and brown on the other side.
NOTES:
- Whole wheat flour is recommended. Other types of flour will work in this recipe.
- Fat free milk is recommended. Milk that contains fat, as well as alternative milks, will work in this recipe.
